The granite cuvée comes from a granitic soil that offers a big character with good minerality. It is the expression of very old trees pears (300 years) measuring 20 meters high who never saw a drop of chemical treatment. 17 varieties of pears carefully sorted and divided into identical quantity make up each year, in order to receive the identity of the vintage, this wine.

Hand crafted medium sweet cider flavoured with in-house brewed mix of natural cinnamon, cardamom and nutmeg. Bottle fermented for at least six months according to traditional method, then disgorged and flavoured.

"We pressed and naturally fermented the aromatic Doyenné du Comice pears, without adding any sulfites or enzymes. To finish it off we put this cider on oaken barrels for 5 months. As we did not add any sulfites, Perry turned out quite a bit more sour than you might expect of a pear cider, super refreshing with lovely citrus tones. A cider with a lot of flavour, perfectly made to serve cold on a sunny day." BBD is 20/04/2024

"Matured on Hungarian Furmint & Hárslevelü grapes that macerated previously on Lambic. Since 2022, Oud Beersel has been working with Vitalii Karvyha, the former Berryland cider maker from Ukraine, who had to flee the war. They put their skills together to produce cider on the wooden barrels at Oud Beersel. The proceeds from the sale of the cider should enable Vitalii to start up an activity again. The cider is produced from McIntosh, Cortland and wild apples picked from an orchard more than 50 years old. The macerated apple juice is naturally fermented and bottled at Oud Beersel without pasteurisation or the addition of sulphites. This results in a wild dry cider, with almost no residual sugar."
