"A Farmhouse Adambier. Adelaide is our take on an adambier, an old world style ale. Aged in oak for one year, Adelaide is dry with notes of chocolate, stone fruits and a hint of smoke. Born out of a recipe from our homebrewing days, Adelaide is our take on recreating the oft overlooked Adambier style. Hailing from the era of pre-industrialized malting processes, these strong ales exhibited a smoke-forward profile from the use of wood-fired kilns and were usually aged for an extended period in wood. We started with a robust grist of Munich, Vienna, and Chocolate malts alongside the star of the show: Beechwood Smoked Barley. "Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
The soft, mildly sour berry taste, harmonises with the oak barrels’ aromas in which Geuze Mariage Parfait has ripen. The body speaks of vanilla followed by a bitter aftertaste of cloves that becomes increasingly intense. Sublime."

"Today we're releasing a new farmhouse ale refermented with four different types of Texas summer melons -- Watermelon, Casaba melon, Santa Claus melon, and Sugar Kiss melon! Farmhouse Ale Refermented with Texas Summer Melons was brewed in August with well water, malted barley, malted oats, wheat, and hops. It was fermented in stainless steel with our mixed culture and refermented with the summer melons. It's 5.8% alcohol by volume, unfiltered, unpasteurized, and 100% naturally conditioned."

"Ivy is a beer made with 100% regionally grown pale malted barley. In the kettle, it sees both three to four-year aged whole leaf hops, as well as pellet hops from the most recent harvest. Both are grown here in Oregon. It is the most simple of our recipes, yet one of the most complex in expression. One malt, one hop, our wonderful local water, and time. Ivy spends two years in neutral wine puncheons. We choose from these barrels a blend that is funky, but not too funky. Tart, but not too sour. Complex, but still hedonistic. Really, a blend that we are happy to make, to blend, and ultimately to share, in celebration of our new home."

When Bryan Martin (Ravensworth Wines) realised his vines were smoke tainted from the 2020 bushfires, he concocted a plan ‘B’ with Topher Boehm (Wildflower Brewing & Blending). These beers are the marriage of Bryan’s hand harvested, carbonic macerated, whole bunch wine grapes with Topher’s freshly fermented Gold Australian Wild Ale. Aged and macerated for eight months in Murrumbateman before travelling to the big smoke for bottling and maturation."

"A 50/50 blend of barrel aged Gold with fresh Gold that has just completed primary fermentation. This composition of aged and fresh beer is what we had originally intended for our Gold. It didn't end up like that though, as Gold is 100% barrel aged. We love the fresh fermentation esters and bright hop character we get in our young fermentations. "Beer of mixed fermentation, the Cassis Rullquin is made from the fermentation of 160 g of blackcurrants by liter in a blending of 7/8 of Rulles Brune and 1/8 of 1 year old lambics, which has matured for 8 months on oak barrels. Unfiltered and unpasteurized, this beer is refermented for 6 months in the bottle."

Season 2020-2021. Assemblage #67. Bottled on 28/07/2021. "The Cuvée Miel is a special version of the Cuvée Armand & Gaston. This geuze is a blend of one-, two-, three- and four-year old lambikken that have been infused with honey on the coolship. While blending, we added some more local honey. The weighted average age of this blend upon bottling was more than 24 months. 100% 3 Fonteinen brewed lambik."

Season 2018-2019 Assemblage #108. bottled on 11/09/2019. "This Oude Geuze is a blend of lambikken originating from eight different brews and six different barrels. A portion of the oude lambikken was brewed in February 2016. The weighted average age upon its release was 47 months, including bottle maturation of over 2,5 years."

Season 2019-2020 Assemblage #56. bottled on 26/11/2019. "For this specific blend of Cuvée Armand & Gaston, we blended lambikken originating from seven different barrels and from eight different brews. Almost 40% of this blend are oude lambikken. The bottle aged for more than two years in our cellars before release, bringing the weighted average age of the blend up to more than 43 months. While blending, we added summer honey, harvested from our own bee hives."

Season 2020-2021. Assemblage n°32. Bottled on 03/03/2021. "For this specific Oude Geuze Golden Blend, we blended lambikken from three different barrels and five different brews. The brew consists of more than one third of 50-month old lambik. We also added one sherry barrel of 34-month old lambik. This way, the weighted average age of the blend upon bottling is 28 months. About one third of the 3 Fonteinen lambik was brewed with Pajot grown cereals. This is the same blend as the 31st, but with a different sherry barrel."

Season 2020-2021. Assemblage n°33. Bottled on 09/03/2021. "A Golden Blend with both young lambik and a good portion of two-year and four-year old lambik. This blend consists of lambikken of seven different brews and four different barrels, and 75% of the lambikken have been brewed by us. More than 20% of the heirloom cereals used in the 3 Fonteinen brewed lambik, was sourced in Pajottenland. The weighted average age of the blend was 25 months upon bottling. This blend features the same lambikken as blend 34, except one and with different proportions."

This blend consists of lambikken of seven different brews and four different barrels, and almost 70% of the lambikken have been brewed by us. Almost 10% of the heirloom cereals used in the 3 Fonteinen brewed lambik, was sourced in Pajottenland. The weighted average age of the blend was 27 months upon bottling. This blend features the same lambikken as blend 33, except one and with different proportions (and in a smaller batch)."

"This specific Oude Geuze Golden Blend only features one-and-a-half-year old and four-year old lambikken, but with the latter at 33% instead of the usual 25%. The oldest lambik was brewed on the 24th of January 2017 (so almost 50 months old). This way, the weighted average age of the blend amounts up to a tad more than 27 months. While blending, we added some honey from our own bee hives in Lot. The lambikken originate from three different brews and two different barrels."

"This Platinum Blend is a blend of jonge lambikken and four-year oude lambikken only, originating from four different brews and two different barrels. One quarter of the blend consists of lambikken brewed with our own sourced heirloom cereals from different spots in Brabant."

"This Platinum Blend is a blend of both jonge lambikken, two-year and four-year oude lambikken, originating from eight different brews and four different barrels. One fifth of the blend consists of lambikken brewed with our own sourced heirloom cereals from different spots in Brabant. The weighted average age of this blend is about 25 months, and the oldest lambik was brewed beginning of 2017. With one brew, we used a local hop variety that we are trying to revive, called Groene Bel. 100% 3 Fonteinen brewed lambik."
