Elk deel van dit bier is zorgvuldig vervaardigd om een zuivere, frisse en vooral verfrissende smaak te leveren met een aanhoudende complexiteit. "Pomona, de godin van de fruitbomen, maar ook een nieuwe giststam die vers van de pers is. Als een van de eerste Belgische brouwerijen mochten we hiermee aan de slag gaan om te kijken wat we konden aanvangen met deze veelbelovende godin. De gist kwam tot stand door verschillende gisten te kruisen met elkaar en dan langzaamaan te laten evolueren op laboschaal. Terwijl er heel veel genetisch gemanipuleerd wordt bij Amerikaanse brouwerijen beheerst het Canadese Escarpment deze alternatieve techniek als geen ander. Het resultaat van deze samenwerking tussen gistgoden Lallemand, Escarpment Labs en Dok is een heel fruitige IPA van 6.7% gehopt met bijna enkel maar Mosaic. De gist zorgt voor een aangename troebel, de nodige juiciness, veel citrus en steenvruchten in de neus. De Mosaic en Mosaic cryo hop werd tijdens 5 verschillende toe voegingen doorheen het hele proces toegevoegd. "

"The Greeks Hooi Geuze is a blend of lambics of 1, 2, 3, 4, 5 and 6 years and a maceration on fenigreek seeds. The result is a full-bodied geuze with the taste of fenigreek seeds, according to some a light nutty flavor. Fenugreek originally came from Mesopotamia and is a plant from the legume family. It is used as a culinary herb and as a spice and is also found in cheeses and now also in Publitasting Grieks Hooi Geuze."

"Blend of 1, 2, 3 years old lambic with Barbera grapes from Piëmonte in Italy. This blend had a second fermentation in the bottle."

"Kriek 2021 with Merlot grapes. During the 2021 cherry harvest, we processed 3 different varieties of cherries. This blend mainly contains Noordkriek and a small amount of Kelleris. This from local growers in the Antwerp region, a fruit region that has almost completely disappeared but has recently seen some new initiatives. The maturation took place in ex-Bourgogne and ex-Bordeaux casks. The Merlot we used is the barrel aged version of our Pet Bière 2021. After a period of 9 months in an ex-Bourgogne and ex-lambic barrel. The name of this beer was chosen just a few days before the sale, after a difficult period for many of us. 2022 will go down in history as a Bloedrood (bloody red)/gitzwart year. And also a tribute to the healthcare sector that has given blood, sweat and tears."
