    The Meerts Tilquin series was made by fermenting fruit that had already been used once. The fruit was fermented for a period of 4 months in a blend of 80% 1 year old Meerts and 20% of a blend of different 2 year old lambics. Meerts (or March Beer) is a low strength lambic, which was originally produced with the weaker wort obtained from the rinsing of the grains. Unfiltered and unpasteurized, they are refermented in the bottle. There are 12 bottles with 6 different fruits: Pinot Gris, Pinot Noir, Riesling,Syrah, Roussanne and Airelle Sauvage.

    "The Brett Porter is inspired by the old London Porters, superstar beers of the 1800s, which were kept in huge wooden casks in which Brettanomyces yeasts grew. It was not barreled, but co-fermented with our house Brettanomyces, and brewed from magnificent English specialty malts. Pours black with a ruby tint. Its foam, dark beige, is fine and persistent. Brettanomyces are present on the nose, giving it a vinous character with very ripe cherries like an old kirsh, and a little leather. A roasted and slightly smoky touch completes the picture. These aromas are found in the mouth, with added notes of mocha, cocoa powder and prunes."

    Season 2021-2022 Assemblage #75. Bottled on 24/05/2022 "This particular blend of Oude Geuze consists of nine different brews originating from nine different barrels. More than 80% of the blend consists of lambikken brewed by ourselves. More than 60% of the blend consist of lambikken of two, three and four years old, bringing the weighted average age to more than 28 months. Half of the combined grain bill was composed of cereals that we sourced from our Cereal Collective in and around Pajottenland."

    Season 2021-2022 Assemblage #94. Bottled on 26/07/2022 "For this Oude Geuze, we selected lambikken from four ex-sherry barrels - three Oloroso and one Palo Cortado - with highly peated characteristics, and blanded these with a more mellow lambic to balance it all out. Consequently, we used lambikken from five different brews and six different barrels, spread over young, quite a lot of three-year old and four-year old lambikken. This way, the weighted average age is more than 35 months."

    Season 2021-2022. Assemblage n°55. Bottled on 25/03/2022. "For this Oude Geuze Golden Blend we blended lambikken that originate from three different barrels and four different brews, with three different brewers. This Golden Blend is particular in that sense that we used two- and five-year old lambikken only, and finished it with some freshly brewed lambik wort for the push in the bottle. Since a good 60% is two-year old lambik and almost 40% is five years old, the weighted average age of this bottle, upon bottling, is more than 31 months. Add to that at least a year of bottle conditioning, and it will have reached a weighted age of more than 43 months. Compared to blend 54, this blend roughly has an inverted proportion of two- and five-year-old lambik."

    Season 2021-2022. Assemblage n°57. Bottled on 31/03/2022. "For this Oude Geuze Platinum Blend, we blended lambikken originating from four different barrels and nine different brews. We used one- two- and four-year old lambikken, in a 27/30/43 proportion and finished the blend with some freshly brewed wort. This way, the weighted average age of this bottle, upon bottling, clocks at to more than 30 months. Add to that at least a full year of bottle conditioning, and it will have reached a weighted age of more than 42 months. Almost 40% of the blend consists of lambikken brewed with grains form our own Cereal Collective."
