Blend Five. "Spectre Sister is a blend of two extra pale beers produced in July and August 2020. The worts were made with maize, wheat, oats and rice. They fermented in a mixture of old bourbon barrels and freshly emptied cider barrels (from Oliver's Cider and Perry, and Ross-on-Wye Cider and Perry Company). Conditioning in bottle took place through winter and spring producing an effervescent, bright and delicate saison."

La première est une saison au seigle fermentée avec notre cocktail de levures "funky" et vieillie durant 9 mois en barriques de Vouvray fraichement vidées. La deuxième est une jeune saison houblonnée généreusement avec de l'Hallertau Blanc, du Nelson Sauvin et du Bru-1. Elle vient équilibrer et rafraichir le côté boisé de la première. Les deux bières ont été assemblées en janvier dernier et maturent depuis maintenant 4 mois. Le résultat est une bière aux accents très vineux, avec des notes de groseilles à maquereau, des arômes de coing et d'acacia. C'est à la fois sec, bien amer, et hautement pintable."

Barrel Aged Farmhouse Ale w. Johanniter grape pomace

"La Brett Porter est inspirée des anciens Porters londoniens, bières superstars des années 1800, qui étaient conservés dans d'immenses foudres en bois dans lesquels se développaient des levures Brettanomyces. Elle n'a pas été barriquée, mais co-fermentée avec notre Brettanomyces maison, et brassée à partir de magnifiques malts spéciaux anglais. Sa robe est noire avec une teinte ruby. Sa mousse, beige foncé, est fine et persistante. Les Brettanomyces sont bien présentes au nez, lui conférant un caractère vineux avec des cerises bien mûres comme un vieux kirsh, et un peu de cuir. Une touche torréfiée et légèrement fumée complètent le tableau. Ces arômes se retrouvent en bouche, additionnés de notes de moka, de poudre de cacao et de pruneaux "

"Our benchmark mixed fermentation saison was aged for six months in oak to develop it’s distinctive flavour profile. The beer then spent a further three months on fresh Victoria and Marjorie plums. The sweet, yellow flesh gives a deep richness of flavour, whilst the dark skins lend colour and a balanced tartness to the beer."

"Project 23 is our latest collaboration with Westwell Vineyard. A mixed fermentation beer was aged in Cognac barrels for three years before it was added to 200kg of unfermented, foot crushed Pinot Noir grapes. Fermentation of the grapes ran through the beer, producing an intense wine character."
