"Il s'agit d'un assemblage de deux brassins de Saison. La première est une saison au seigle fermentée avec notre cocktail de levures "funky" et vieillie durant 9 mois en barriques de Vouvray fraichement vidées. La deuxième est une jeune saison houblonnée généreusement avec de l'Hallertau Blanc, du Nelson Sauvin et du Bru-1. Elle vient équilibrer et rafraichir le côté boisé de la première. Les deux bières ont été assemblées en janvier dernier et maturent depuis maintenant 4 mois. Le résultat est une bière aux accents très vineux, avec des notes de groseilles à maquereau, des arômes de coing et d'acacia. C'est à la fois sec, bien amer, et hautement pintable."

"La Brett Porter est inspirée des anciens Porters londoniens, bières superstars des années 1800, qui étaient conservés dans d'immenses foudres en bois dans lesquels se développaient des levures Brettanomyces. Elle n'a pas été barriquée, mais co-fermentée avec notre Brettanomyces maison, et brassée à partir de magnifiques malts spéciaux anglais. Sa robe est noire avec une teinte ruby. Sa mousse, beige foncé, est fine et persistante. Les Brettanomyces sont bien présentes au nez, lui conférant un caractère vineux avec des cerises bien mûres comme un vieux kirsh, et un peu de cuir. "Our benchmark mixed fermentation saison was aged for six months in oak to develop it’s distinctive flavour profile. The beer then spent a further three months on fresh Victoria and Marjorie plums. The sweet, yellow flesh gives a deep richness of flavour, whilst the dark skins lend colour and a balanced tartness to the beer."

Conceived over a series of emails with our new friend and idol Yvan de Baets we landed upon a spelt heavy saison recipe that speaks true to both of our outlooks on Saison. Snappy bitterness is coupled with a massive wave of melon and freshly cut wet grass from a dry hop of Huell Melon. Finally we naturally carbonated Saison des Rêves in cans and kegs for ultimate crushability. Drinking this beer reminds us of the freshly cut grass after a light rain of cantaloupe chunks, the first roll of a soccer ball over the morning dew on a chilly spring Midwest morning, and the version of He’s Gone from the 10/15/76 show in LA."
