28,71 €Season 2020-2021 Assemblage #27. Bottled on 11/02/2021. "For this, Druif, we co-fermented Belgian Dornfelder with one- and two-year old lambik in a 53/47 cut. We used the freshly pressed and shortly skin-macerated juice and put the unfermented juice with young lambik for continued fermentation in stainless steel. Afterwards, we blended with two-year old lambik. All lambikken originate from seven different barrels and seven different brews. The final fruit intensity is 31.6%."

Bellwoods Grandma
17,97 €"Grandma's Boy was one of the very first beers we aged in oak at Bellwoods, and its (almost) yearly release is one that garners much excitement. This year we decided to switch things up and share the unfruited version, in all its sour/funky/crisp glory -- and named it, simply, Grandma. The absence of fruit allows for more subtle flavours to shine through, showcasing the perfect intersection of acid, brett, oak, and a crisp, spritzy body. Gentle acidity balanced by refined brett character accented by notes of green tea, bosc pear, and champagne"

Tommie Sjef Franc
31,55 €: 1"Franc is a wild ale with Cabernet Franc and a touch of Kékfrankos red wine grapes. After maceration with the grapes, we aged the beer further for another year and a half on a foeder that previously contained Amarone wine from Veneto, Italy. This rounded out the beer and gave it more complexity and depth. Before bottling we added a small amount of a comparatively younger beer with Kékfrankos grapes, to give the overall blend some freshness. It starts with a delicate aroma of fresh strawberries, cherries and rose petals, followed by the wine notes of the barrel and some funk. In the first moments of tasting the beer you will get jammy red fruits like blackberries, cherries and raspberries, after which fresh plums and roasted bell pepper follow. The barrel gives the beer a rich spicy, almost chocolaty and smoky flavour."

28,71 €: 3Season 2022-2023 Assemblage #47. Bottled on 17/02/2023. "We met with ‘JF’ Ginglinger for the first time at the harvest of 2019. Armand opened some of this Gewürztraminer Macération for the team, as he was blown away by the unfiltered and complex wine. A warm friendship between 3F and JF and his family grew from that special moment… For this Druif, we macerated Ginglinger’s Riesling grapes on selected three- and five-year old lambik. We macerated the organic grapes for five months and on an oak barrel. The weighted average age of the blend is more than 39 months. The final fruit intensity is 307 grams of Riesling grapes per litre of Druif."
