La Sambre Ceréjhe -...
28,79 €: 1"Ceréjhe is the word used to designate cherries in Wallonian dialect. A delicate blend of saison (spring barley, Wallonian Winter barley, spelt & wheat) fermented with our own strain, 1 year old lambic and cherries. The cherries come from the lovely lands of our friends Sandra and Stephane next to the beautiful Mont Ventoux. The cherries underwent a 7 months long fermentation at cold temperature and were left intact (no pressing) during the entire process to allow the aromas to slowly diffuse into the beer. The maceration was then back blended with the base saison to reach a balance between the saison, the lambic and the cherries. Not meant to be a cherry bomb, we hope that you'll enjoy the delicate notes of these beautiful fruits, coming from an outstanding terroir. An authentic farmhouse beer, Brewed in our 800 years old farm."

26,71 €: 2Season 2021-2022, Assemblage #51. Bottled on 17/03/2022. "For this Kweepeer, we macerated quinces from different organic fields around Flanders. We put them for almost four months on young lambik and blended with some more jonge lambik before bottling. It is hard to put a correct fruit intensity level as the massive quinces give off their flavours and aromas but do not really get disintegrated into the lambik. We did macerate 50/50 quince and lambik. So quite intense nonetheless."

We took 300kg of Muscadis grape pomace and blended to a mixed fermentation Saison that aged 12 months in Pinot Noir barrels. An elegant and complex beer with a light acidity and a balance of rich flavors and earthy tannins."

25,92 €: 2Season 2018-2019. Assemblage #36 bottled on 28/01/2019. "This specific Cuvée Armand & Gaston was assembled with lambics from 8 different barrels that originate from 8 different brews. The average age of this blend at bottling was 18 months = 55% young + 30% semi-old + 15% old lambic."

Tommie Sjef Sauvin
31,55 €"Sauvin is a blend of a rustic saison and longer aged wild ales (3 up to 5 years) dryhopped with Nelson Sauvin hops for over a year in one of our Bourgogne foeders. In the nose you will come across white wine grapes and melon notes from the Nelson Sauvin hops. Accompanied by dusty, oaky and a citrus aroma’s from the base beer. In taste you will experience a slightly bitterness and herbal notes like thyme from the hops, a balanced sourness with a fairly dry woody finish. Our dryhopped wild ales are very well suited for longer term aging (3+ years), but 6-12 months after bottling the taste will already evolve."

"For this specific Zenne y Frontera, we blended ten different lambikken, matured on both Oloroso, Amontillado, Palo Cortado and Pedro Ximénez barrels. This bouquet of sherry lambikken originate in total of ten different original barrels and nine different brews. The weighted average age of this blend upon bottling is a staggering 40 months. More than 1/3 of the lambikken was brewed with locally sourced Pajottenland grains. 100% 3 Fonteinen."
