Wheat Saison brewed with spices and Colorado hops, collab with Cellar West Artisan Ales. BB is end 2022

"Blueberries grow wild in the Ardennes forests. The wild blueberries are harvested in the region of Vielsalm. The Blueberries (Vaccinium Myrtillus) are added whole (no juice) to the lambic in a ratio of 40 kg to 100 liters of young lambic. This Blueberry Lambic contains only wheat, barley malt, hops and Blueberries. Not pasteurized, no artificial sweeteners, flavors or colorings."

Vintage 2023. Farmhouse with organic beetroots.

"Grisette is the little cousin to our Saison. It is brewed to drink fresh but will age nicely with our mixed house yeast/brett culture. Low alcohol, dry, refreshing, light bodied beer with notes of citrus and tropical fruit balanced with earthy continental hop character and moderate bitterness. A refreshing session beer to quench your thirst on those sunny Mediterranean days. Salud"

Cuvée Saison (Blend of Saison, Brett Saison, Sour Saison) with organic peaches from Ordal (Barcelona).

"Xino Xano is our spring/summer seasonal release. We use a traditional no boil Berliner Weisse brewing method, 50% organic Belgian malted barley, 25% Belgian malted wheat, 25% Spanish flaked wheat, co-fermentation with our house yeast and lactic acid bacteria, then finished with a big dry hop addition (variety varies). Tart, tropical and refreshing, it's perfect for quenching your thirst. Best drunk after a long cycle or at the beach overlooking the sea!"

Season 18/19 Assemblage #14 bottled on 13/12/18. Blend made with 100% lambic brewed by 3 Fonteinen orignating from 6 different barrels and from 9 brews. This blend is made of 60% young lambic and 40% semi-old and old lambic.

Season 18/19 Assemblage #13. bottled on 11/12/18. Blend made with 100% lambic brewed by 3 Fonteinen from 6 different barrels originating from 12 different brews. 45% consists of semi-old and old lambic from 6 deiffernt brews.

Season 18/19 Assemblage #9. Bottled on 28/11/18. This particular Hommage has macerated a bit more than 6 months.The maceration ratio is 72% raspberries and 28% cherries.

Season 2018-2019 Assemblage #91. bottled on 06/11/18. Blend made from 7 different barrels originating from 7 different brews. A portion of this blend was bottled in 37.5cl bottles.

Vintage 2023

Phi (Blond Sour) aged with Smoked pineapples.

Season 18/19, Assemblage #66. bottled on 18/04/19. This specific Oude Kriek has macerated for 6 months with the cherries oak foeders. The lambics in this blend come from 7 different barrels and originating from 7 different brews from 3 Fonteinen. The final fruit intensity is of 356 grams of sour cherries per liter of Oude Kriek.

"Made in deep winter by freezing the apple juice before fermentation starts. This concentrates the rich, intense flavours and reflects the sweet and tart character of late ripening Estonian apple varieties." Fermented with wild yeats and matured in oak barrels.

Season 18/19 Assemblage #41. bottled on 21/02/19. Blend made with 100% lambic brewed by 3 Fonteinen from 4 different barrels originating from 5 different brews. The oldest lambic was brewed on 24th April 2015 which brings the average of the lambics used to 23 months when bottling.

"Il s'agit d'une hazy dipa, bien trouble, teintée d'une couleur jaune paille. Cette bière est volontairement très sèche pour accentuer sa pintabilité. Un houblonnage massif de Simcoe, Mosaic et Amarillo confèrent une magnifique gamme aromatique sur les fruits tropicaux confits. Niveau originalité, on repassera, niveau efficacité c'est gagné. 9,2% d'alcool, pour une buvabilité extrême. Les plus nostalgiques se rappelleront vaguement l'anthologique Suske le millionnaire. Cette bière est dédiée à Suzanne et Jean-Claude de l'épisode culte "La soucoupe et le perroquet", de la fantastique émission StripTease."
