"Epine noire" est une double saison aux bretts vieillie un an en barriques. Elle a ensuite macéré 3 mois sur des prunes fraiches de la variété Stanley. Nous avons utilisé 200 grammes de fruit par litre de bière. Après 4 mois de maturation en bouteilles et en futs, on est très contents de vous la présenter enfin!"

"Il s'agit d'un assemblage de deux brassins de Saison. La première est une saison au seigle fermentée avec notre cocktail de levures "funky" et vieillie durant 9 mois en barriques de Vouvray fraichement vidées. La deuxième est une jeune saison houblonnée généreusement avec de l'Hallertau Blanc, du Nelson Sauvin et du Bru-1. Elle vient équilibrer et rafraichir le côté boisé de la première. Les deux bières ont été assemblées en janvier dernier et maturent depuis maintenant 4 mois. Le résultat est une bière aux accents très vineux, avec des notes de groseilles à maquereau, des arômes de coing et d'acacia. C'est à la fois sec, bien amer, et hautement pintable."

"Our first oak barrel aged beer of the year, in honor of the great Thelonius Monk. It is a Cuvée Saison aged in barrels for 1 year, same base as Jaco ("turbid mash"), long boil with old hops and raw wheat from Cal Pauet. Complex, funky and fruity with notes of wood that will be integrated."
