"As years passed and our oak aged beer became more robust, we discovered many unique, interesting, single barrels deserving of a special release. Barn Owl was created as a response to these lone wolves, and has grown into a diverse, ongoing series that reflects the growing diversity of our barrel program. The name is a nod to the wise and exacting animal that keeps watch over the farmhouse (er..industrial warehouse), and the one-off creations are released sporadically throughout the year, just as soon as we deem the barrels ripe for the picking. No. 23 is a blend of pale ales aged in American oak foeders, and refermented on two varieties of peaches."

"At its roots it's a rich, dark ale, but the time it spends in barrels with brett and bacteria harmonizes the ingredients, yielding bright levels of acidity and complimentary fruit flavours. A hybrid style of sorts, that defies simple categorization. A foundation of roasted malts lends aromas of chocolate, mocha, and charred wood, while the flavours are firmly rooted in tart berries, black forest cake, and subtle caramel. High, refined carbonation within a dry body."

"A symbol synonymous with Bellwoods Brewery; our White Picket Fence has undergone a complete overhaul and its repurposed form much better reflects the direction of our brewery. Premiering at Witchstock, this first batch of the newly transformed White Picket Fence is brewed with the addition of wheat, oats and rye and fermented and conditioned in foeders for 6 months, blended with fresh saison, then gently dry-hopped before bottle conditioning."

Funky farmhouse ale aged in white wine barrels. Fermented with a blend of Brettanomyces and Fantome yeast.

"This series of four herbal beers is dedicated to the seasons. Each beer stands for a particular season, so you can drink your way through the year. A blend of two varieties of cherries from Flemish fruit farmers. Fermented and matured in oak barrels

Season 18/19 Assemblage #86. bottled on 18/04/19. This particular Oude Kriek has macerated for over 7 months. The lambics in this blend originate from 3 different barrels and 5 different brews, of which 62% brewed by 3 Fonteinen and 38% by Brouwerij Boon. Final fruit intensity of 350 grams of sour cherries per litre of Oude Kriek.

Imperial Stout brewed with speculoos cookies and lactose aged in bourbon barrels. Best before is 01/12/2023

"A thirst quenching session beer, Sour Suzy mimics a classic German brewing technique (sour mashing) to impart a light, refreshing tartness. No hop bitterness & very low hop profile. Sour Suzy is not your typical session beer – rather it delivers something a bit more obscure and intriguing. It drinks as refreshingly as a glass of lemonade. The grain bill includes a healthy portion of wheat, while citrusy hops lend bright notes to the aroma which are accentuated by the addition of Makrut lime leaves."

"Then you Roast the Mallow is an imperial stout brewed with graham crackers in the mash and lactose, brown sugar and marshmallow fluff in the kettle and boiled for multiple hours. Post fermentation we steeped the finished beer on graham crackers, marshmallow and cocoa nibs which lend to the overall sweetness, but impart flavors of baker's chocolate and roasted liquid marshmallow. Drinking this beer reminds us of backyard baseball games, summertime pool visits, and Benny the Jet Rodriguez. " best before 04/09/2022

Saison blended with lambic from Cantillon and aged in barrels. "An extremely complex but at the same time very refreshing beer. It somehow resembles a hoppy gueuze with a distinct bitterness. Indeed, the Saisons were generously hopped for the well-known keeping properties of hops. Also, they were often dry-hopped, as is the case here. Saison de la Senne has been barrel-aged for three years before bottling. Amber in color, its nose reminds one of Lambic, with notes of fallen apples, wood, leather, and the typical funky character of the Bretts. In the mouth, a soft tartness is present, quickly leading to dryness. The aromas of the nose are completed by those of spelt and rye, quince, green gooseberries and a complex vinous character. The finish is bitter but perfectly in balance." Second blend bottled in March 2023.

"Barrel-aged wild blond beer with elderflower. Once a year we brew a special blend for Dauw. After initial fermentation, when sugars are still present, we infuse the beer for one day with freshly picked elderflower. This results in an overwhelmingly aromatic beer, which becomes more rounded after long barrel aging. By mixing 3 years of vintages, we bring a lot of complexity to the beer. The young barrels add bitterness and floral scents, whereas the older barrels add ripeness and soften the character. Dew is a nice sour beer with rich elderflower, green pepper and citrus. In its aftertaste you can find the soft bitterness and the long lasting tones of spring blossom aromas." BBD is 18/02/2024

"We pressed and naturally fermented the aromatic Doyenné du Comice pears, without adding any sulfites or enzymes. To finish it off we put this cider on oaken barrels for 5 months. As we did not add any sulfites, Perry turned out quite a bit more sour than you might expect of a pear cider, super refreshing with lovely citrus tones. "Barrel-aged Bière de Garde with Willow Bark. After an autumn forest walk through swirling leaves and drops of rain, nothing feels better than throwing off your shoes and nestling in front of the fireplace with a glass of Sintel. This barrel-aged bière de garde was brewed with toasted willow bark for soft notes of brown sugar and clove that gently complement its smooth caramel-like maltiness. It was aged on oak for 20 months, creating a hint of vanilla from the wood. We fermented it with Mud King, a blend of wild yeasts from all over the world that composed extraordinarily fruity aromas in this beer. Sintel has a tinge of sourness and a mild bitterness that reflects the tannins of the willow bark. Its silky finish makes for a truly memorable experience." best before is 16/09/2023
