"This March we dove into our recipe notebooks looking for ideas to inspire the ultimate session-able stout recipe. Here is Ostara Stout our take on the concept of 'Dublin Stout'. Brewed to be complex but quaffable. We took some of our imperial stout tricks and adapted them to a lower ABV base recipe. The result has layered malts with some lovely soft chocolate notes finished with a nice hop zing to help clean the palate. Sláinte."

"La Brett Porter est inspirée des anciens Porters londoniens, bières superstars des années 1800, qui étaient conservés dans d'immenses foudres en bois dans lesquels se développaient des levures Brettanomyces. Elle n'a pas été barriquée, mais co-fermentée avec notre Brettanomyces maison, et brassée à partir de magnifiques malts spéciaux anglais. Sa robe est noire avec une teinte ruby. Sa mousse, beige foncé, est fine et persistante. Les Brettanomyces sont bien présentes au nez, lui conférant un caractère vineux avec des cerises bien mûres comme un vieux kirsh, et un peu de cuir. Une touche torréfiée et légèrement fumée complètent le tableau. Ces arômes se retrouvent en bouche, additionnés de notes de moka, de poudre de cacao et de pruneaux "

"Smokey Islands is the result of a collaboration with Gili Drinks. Phi was aged for several months on a Kilchoman peated whisky barrel, was blended with fresh ginger juice, some honey and pineapple pulp (400l beer/200 l juice ratio). We gave this "cocktail" some time to blend in well, resulting in a spicy fruity smoky sour. This is not just another ginger beer, with Smokey Island we once again challenge you to #dare to go wild."

"Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers, brewed for Christmas. It has a very potent beer (12% alc/vol). It has been boiling for many hours, brewed with pale malt with white candy sugar in the kettle. The Nugget hops gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age."
