XXX-Bitter is a variation on the existing XX-bitter, with additional 50% more hops.

Vintage 2022. "Père Noël is a Christmas ale, though very different from any other Christmas ales you might know. While most Christmas ales are rich & sweet, this one is amber-coloured, 7% vol. Alc. strong and tastes quite bitter. The complex taste is completed with the addition of liquorice. In the recipe we can also find pale malt, Munich malt, Caramel malt, Brewers Gold hops and Hallertau hops."

Organic Hoppy Belgian Pale Ale

"4 months bottle refermented with 100% Brussels Brettanomyces yeast.
Amber colored with copper reflections, very fruity (pineapple and red fruits), sustained by hop flavors and complex notes of old leather. In spite of its 6,5%, its dry and bitter finish makes it a surprising thirst-quencher."

Belgian IPA. "Bitter is Better". Brewed with organic ingredients.

"You know our Bruxellensis, a complex beer brewed with an indigenous Brussels yeast that we found in the "wild" nature of Saint-Gilles: the famous Brettanomyces Bruxellensis. We have made a version of this beer that has been able to mature for several months in old red wine barrels: the BRUXELLENSIS RESERVA. The result is a flavorful festival of red and black berries: wild strawberries, candied cherries, blackberries and blueberries. It has some woody notes of course, and the Brett adds not only fruity notes, but also accents of old leather. The aftertaste is dry with a delicious bitterness. A wine-like and complex beer that is at the same time very refreshing and easy to drink."

Blond beer co-fermented with apple juice and with Champagne yeast.

"Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers, brewed for Christmas. It has a very potent beer (12% alc/vol). It has been boiling for many hours, brewed with pale malt with white candy sugar in the kettle. The Nugget hops gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age."

"When the hop farmers start harvesting, we start brewing our Hop Harvest. The fresh, undried hop flowers are picked in the morning, and on the same day they are used in the Hop Harvest-brew, straight from the field. Because we use 'wet hops', the beer has a fresh, floral, and pleasantly bitter taste. By changing the recipe every year, the outcome is always a surprise. Drink this beer young if you can, that's when the wet hop shows of their floral character the most."

"The 100PAP is a 6% alcohol Pale Ale type beer. It has a magnificent amber-copper color. On the nose, a delicious esters fermentation (banana, pear) flourishes as well as an exotic and spicy touch. On the palate, lovely malty aromas of caramel and crème brûlée bring its roundness, and are served with fruity (banana, apricot and lemon) and spicy notes where juniper and its finely minty side are mixed with coriander, and white pepper, all balanced with a slight bitterness. A generous beer, just like its partners !"
