De la Senne Brett Porter
€3.67"The Brett Porter is inspired by the old London Porters, superstar beers of the 1800s, which were kept in huge wooden casks in which Brettanomyces yeasts grew. It was not barreled, but co-fermented with our house Brettanomyces, and brewed from magnificent English specialty malts. Pours black with a ruby tint. Its foam, dark beige, is fine and persistent. Brettanomyces are present on the nose, giving it a vinous character with very ripe cherries like an old kirsh, and a little leather. A roasted and slightly smoky touch completes the picture. These aromas are found in the mouth, with added notes of mocha, cocoa powder and prunes."

Burning Sky Plum Provision
€18.86"Our benchmark mixed fermentation saison was aged for six months in oak to develop it’s distinctive flavour profile. The beer then spent a further three months on fresh Victoria and Marjorie plums. The sweet, yellow flesh gives a deep richness of flavour, whilst the dark skins lend colour and a balanced tartness to the beer."

Conceived over a series of emails with our new friend and idol Yvan de Baets we landed upon a spelt heavy saison recipe that speaks true to both of our outlooks on Saison. Snappy bitterness is coupled with a massive wave of melon and freshly cut wet grass from a dry hop of Huell Melon. Finally we naturally carbonated Saison des Rêves in cans and kegs for ultimate crushability. Drinking this beer reminds us of the freshly cut grass after a light rain of cantaloupe chunks, the first roll of a soccer ball over the morning dew on a chilly spring Midwest morning, and the version of He’s Gone from the 10/15/76 show in LA."
