€12.23"Our Old style Kriek with cherries of the Schaarbeek variety is a variation of our Old Kriek. This beer is made with 100% organic Schaarbeek cherries, all grown ourselves. This type of cherries is becoming ever more rare, when they used to be omnipresent in the region for the production of Old Kriek. So we decided to start growing these ourselves on a couple of fields close to the brewery. The entire cherries are fermented in oaken barrels in lambic beer of at least one year old. After six months this transforms into Old Kriek with about 400 grams of cherries per liter of beer. Because of the second fermentation in the bottle, which carbonates the beer, you obtain a delicately soft taste and the distinctive foam head. A true delight for all senses with an harmonious balance between sweet and sour, and of course the added authenticity of the one and only Pajot kriek. We blended with some jonge lambik before bottling. The final fruit intensity amounts up to 375 grams of sour cherries per litre of Oude Kriek. With more than a year of bottle conditioning, the weighted average age of this blend will range around 30 months upon release. 100% 3 Fonteinen brewed lambik."

We added some more jonge lambik just before bottling, bringing the weighted average age at almost 20 months upon bottling. The final fruit ratio is 432 grams of sour cherries per litre of Kriek."

Bottled 12/10/2021."This kriekenlambik is the result of a maceration of sour cherries for more than eight months on young lambik, afterwards blended with some more soft lambik to balance it all out. We aimed for a kriekenlambik (so remaining flat). We used lambikken from three different barrels and eight different brews. The weighted average age of the kriekenlambik upon bottling was 24 months. The final fruit intensity is 337 grams of sour cherries per litre of kriekenlambik. 100% 3 Fonteinen brewed lambik."

We used both two- and three-year old lambikken for both macerating and blending, originating from four different barrels and ten different brews. The weighted average age is almost 26 months, and the final fruit intensity clocks in at 319 grams of sour cherries per litre of Kriek."

In 2023 we did the same; maceration of Gorsem cherries on 2 year old lambic for 6 months. We blended these 2 cherry lambics together and added fresh Satureja herb to them."

Bofkont Bloedrood 2021
€31.50"Kriek 2021 with Merlot grapes. During the 2021 cherry harvest, we processed 3 different varieties of cherries. This blend mainly contains Noordkriek and a small amount of Kelleris. This from local growers in the Antwerp region, a fruit region that has almost completely disappeared but has recently seen some new initiatives. The maturation took place in ex-Bourgogne and ex-Bordeaux casks. The Merlot we used is the barrel aged version of our Pet Bière 2021. After a period of 9 months in an ex-Bourgogne and ex-lambic barrel. The name of this beer was chosen just a few days before the sale, after a difficult period for many of us. 2022 will go down in history as a Bloedrood (bloody red)/gitzwart year. And also a tribute to the healthcare sector that has given blood, sweat and tears."
