Granizo / Rare Barrel Noble...
€14.65"Collaboration with The Rare Barrel (USA). The noble Alerce (Fitzroya cupressoides) is one of the longest-lived trees in the world, living over 3,000 years, transcending our conception of time and space. Noble Alerce is a mixed fermentation beer that patiently matured for eight months in Alerce barrels over 100 years old, which previously fermented apple chicha and, prior to that, beer from southern Chile. More noble impossible! This refreshing beer has a generous and fine carbonation, aromas that evoke the countryside and spices, and in the mouth it has a balanced acidity with fruity and spicy notes. Rustic and delicate at the same time, we are in the presence of a very noble beer!"

Brussels Beer Project...
€24.15"A foulage & carbonic maceration of kelleris cherries, spontaneously fermented with beer wort. 6 months matured in oak barrels. In July 2021 our brewer Tiago picked up 500kg of organic sour cherries from Karel Vaes in Limburg to create this deep red & sour cherry beer. Now cherish the cherries and be mezmerized in the moment!"

Lervig Rackhouse Coconut...
€20.95"This beer is defined by a natural marriage of coconut, rum and bourbon which produce aromas of coconut cream pie. Upon the first sip, light notes of honey and spice dance on the tongue before freshly-brewed coffee intertwines with the dominant toasted coconut flavours. The finish has a boozy edge which is softened by vanilla-forward sweetness and oak lactones from both the coconut and 14 months in bourbon & rum barrels."

Mills Still
€25.91: 4"Still is a single barrel bottling of four year old beer, brewed in March 2018. We have been hoping to find a barrel that would have enough character and bite to exist without the need for carbonation. The wort was made using a turbid mash and underwent an extended boil with large quantities of aged hops. After two nights in our coolship, the wort was transferred to a single 500 litre barrel for four years of fermentation and maturation. The resulting beer was bottled still, without the addition of sugar to produce a refermentation. It has a significant richness for the abv, balanced by a striking hop bitterness, and lingering tannin from the four years in oak."

Bellwoods Black Liquids Vol. 9
€14.11"The latest volume in the Black Liquids series brings together the classic yet sophisticated combination of chocolate and oranges. The base beer received a generous dose of toasted cocoa nibs and was further conditioned on a big ol’ heap of orange peels — extracting the essence of the orange without the acidity in the name of keeping everything silky smooth. Does Black Liquids 9 bring forward fond memories of munching on a Terry's Chocolate Orange? Definitely. Did we melt several Terry’s Chocolate Oranges together in a pot in order to conduct a side-by-side taste comparison? Maybe later."

Bellwoods Brettal Head
€12.97"Brettal Head is a unique, intensely fruity style of foeder aged pale ale. In true Bellwoodsian fashion we've tweaked and updated it to meet our current preferences. Fully fermented and massively dry-hopped beer undergoes refermentation in oak, creating new layers of complex brett character, light acidity, lasting hop aromatics, and expressive fruit flavour. "

Bellwoods Grandma
€17.97"Grandma's Boy was one of the very first beers we aged in oak at Bellwoods, and its (almost) yearly release is one that garners much excitement. This year we decided to switch things up and share the unfruited version, in all its sour/funky/crisp glory -- and named it, simply, Grandma. The absence of fruit allows for more subtle flavours to shine through, showcasing the perfect intersection of acid, brett, oak, and a crisp, spritzy body. Gentle acidity balanced by refined brett character accented by notes of green tea, bosc pear, and champagne"

Bellwoods Intermodal (2021)...
€19.95"Intermodal is our very first 100% spontaneously inoculated wild beer, created in a style inspired by traditional lambic producers. This particular Intermodal is our first three year blend, with spontaneously fermented beer from 2020, 2019 and 2018. We blended this year’s Intermodal for our tastes, that is to say using a larger percentage of the younger barrels than aged ones, and the results are a delectable balance of acidity and bitterness, with notes of tannic white grape, wild fermented cider, and apple baking spices."

€14.24"White Picket Fence is a foeder fermented saison made by blending aged beet with a small percentage of fresh beer, before being gently dry-hopped & bottle conditioned. Fair Isle Adelaide
€36.69"A Farmhouse Adambier. Adelaide is our take on an adambier, an old world style ale. Aged in oak for one year, Adelaide is dry with notes of chocolate, stone fruits and a hint of smoke. Born out of a recipe from our homebrewing days, Adelaide is our take on recreating the oft overlooked Adambier style. Hailing from the era of pre-industrialized malting processes, these strong ales exhibited a smoke-forward profile from the use of wood-fired kilns and were usually aged for an extended period in wood. We started with a robust grist of Munich, Vienna, and Chocolate malts alongside the star of the show: Beechwood Smoked Barley. This ingredient allowed us to emulate that smoky aspect, while supporting a more rounded and rich malt base. Adelaide spent over a year in oak puncheons bef...

Fair Isle Alexandra
€29.33"We fell in love with the contribution of fireweed when we did a collab with Jester King – Fair Voyage (we brought down foraged fireweed for the beer). Our friend and ethnobotanist, Alex, first introduced us to fireweed for it’s similarity to green tea and ability to sustainably harvest. Alexandra has notes of green tea, herbs and a hint of citrus "

Fair Isle Gus
€29.33: 4"An Oak-Aged Farmhouse Ale Dry-Hopped with Idaho Gem While hop-forward beers and oak-aged beers may seem to be in different veins, we’ve particularly enjoyed how these elements play off one another in our saisons. Perhaps you remember Jean-Michel, a release that was blended from puncheons and dry-hopped with French Barbe Rouge. The red fruit elements of the hop varietal and the vanillin present in the wood merged together to create an astounding note reminiscent of strawberry pound cake. This convinced us to continue exploring this path in our oak program, and what led to Gus! Starting with a farmhouse ale base featuring Salish Blue wheat from Skagit Valley Malting, Gus completed primary fermentation in oak puncheons and continued to age for 7 months. A hearty dry-hop of flavorfu...

Boon Gueuze Mariage Parfait...
€11.07"Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
The soft, mildly sour berry taste, harmonises with the oak barrels’ aromas in which Geuze Mariage Parfait has ripen. The body speaks of vanilla followed by a bitter aftertaste of cloves that becomes increasingly intense. Sublime."
